And while I’m at it….. two things are clear as day from twiddling these numbers:
a) beverage sales make up a negligible fraction of the business
b) the number of pies per day is critical. which means that Dom Demarco himself is the limiting factor to the growth of the business.

That’s a reasonable complaint. I’ve updated the post to have what I believe to be more realistic best- and worst-case scenarios. The best now says the old man can make 4 pies per hour, and the worst has him at 2.
